Classic Greek Village Salad (Horiatiki)
Forget the lettuce. A true Greek village salad is all about ripe tomatoes, crunchy cucumber, briny olives, and a
generous slab of feta, dressed simply with good olive oil and oregano.

Ingredients
  

  • 4 ripe tomatoes cut into wedges
  • 1 cucumber thickly sliced
  • 1 green bell pepper sliced
  • 1/2 red onion thinly sliced
  • 1/2 cup Kalamata olives
  • 1 block feta cheese
  • 1/4 cup extra-virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt to taste

Instructions
 

  • Add the tomatoes, cucumber, bell pepper, and red onion to a large bowl.
  • Scatter the Kalamata olives over the top.
  • Whisk the olive oil, red wine vinegar, and a pinch of salt, then pour over the vegetables and toss gently.
  • Lay the whole slab of feta on top of the salad - do not crumble it.
  • Sprinkle the feta and salad with dried oregano and a final drizzle of olive oil.
  • Serve immediately with crusty bread to soak up the juices.
