Classic Greek Village Salad (Horiatiki)
Forget the lettuce. A true Greek village salad is all about ripe tomatoes, crunchy cucumber, briny olives, and a
generous slab of feta, dressed simply with good olive oil and oregano.

Kalamata olives

feta cheese

extra-virgin olive oil

red wine vinegar

dried oregano
Salt to taste
Instructions
Add the tomatoes, cucumber, bell pepper, and red onion to a large bowl.
Scatter the Kalamata olives over the top.
Whisk the olive oil, red wine vinegar, and a pinch of salt, then pour over the vegetables and toss gently.
Lay the whole slab of feta on top of the salad - do not crumble it.
Sprinkle the feta and salad with dried oregano and a final drizzle of olive oil.
Serve immediately with crusty bread to soak up the juices.
