Instructions
Heat olive oil in a skillet over medium heat.
Add diced potatoes and cook until golden brown and tender.
Add chopped onion and sliced chorizo to the skillet and cook until onion is translucent.
Beat the eggs with salt and black pepper in a bowl.
Pour the egg mixture over the potato and chorizo mixture in the skillet.
Cook on low heat until the eggs are set.
