Instructions
Melt the dark chocolate in a heatproof bowl set over a pan of simmering water. Allow to cool slightly.
Whisk the egg whites until soft peaks form, then gradually add the sugar, whisking until glossy.
In a separate bowl, whip the cream with vanilla extract until soft peaks form. Reserve some for garnish.
Fold the chocolate into the egg yolks, then fold in the whipped cream until well combined.
Gently fold in the egg whites until just combined. Spoon into serving dishes and chill for at least 2 hours.
