Instructions
In a small bowl or jar, combine chia seeds, almond milk, and vanilla extract. Stir well to avoid clumping.
Let sit for 5 minutes, then stir again to break up any clumps.
Cover and refrigerate for at least an hour or overnight until it thickens to a pudding-like consistency.
Before serving, stir in honey or maple syrup to taste.
