Ingredients

  • 8 slices bacon cooked and crumbled
  • 2 cups all-purpose flour plus more for dusting
  • 1 tablespoon baking powder fresh
  • 1/2 teaspoon salt
  • 1/2 cup butter cold and cubed
  • 3/4 cup cheddar cheese shredded
  • 2 large eggs lightly beaten
  • 1/2 cup milk

Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large bowl, mix the flour, baking powder, and salt. Add the cold butter and rub it into the flour mixture until it resembles coarse crumbs.
  • Stir in the crumbled bacon and shredded cheddar cheese.
  • In a separate bowl, beat the eggs and milk together. Add this to the flour mixture and stir until just combined.
  • Turn the dough onto a floured surface and knead gently. Pat into a round shape, about 1 inch thick. Cut into 8 wedges and place them on the prepared baking sheet.
  • Bake for 20-25 minutes until golden brown. Remove from the oven and let scones cool slightly before serving.
