Season the pork chops with salt and pepper on both sides.
In a large pot, heat the olive oil over medium heat.
Add the sliced onion and minced garlic to the pot and cook until the onion is translucent.
Add the pork chops to the pot and fill it with enough water to cover the chops.
Add the bay leaves to the pot.
Bring the water to a boil, then reduce the heat to low and cover the pot.
Simmer the pork chops for 1 hour, or until they are tender and cooked through.
Remove the pork chops from the pot and serve.
