Cheesy Beef and Rice Casserole
A delicious and comforting casserole made with ground beef, rice, and lots of cheese.
Ingredients
- 1 lb ground beef
- 1 onion medium, chopped
- 1 clove garlic minced
- 1 cup long grain rice
- 2 cups beef broth
- 1 can tomato soup 10.75 oz, condensed
- 1 can mushrooms 4 oz, drained, sliced
- 2 cups shredded cheddar cheese
- 1/2 tsp thyme dried
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and cooked through. Drain any excess fat.
- Stir in the rice, beef broth, condensed tomato soup, mushrooms, dried thyme, salt, and pepper. Bring to a boil.
- Transfer the mixture to a greased 9x13-inch baking dish. Cover with foil.
- Bake for 30 minutes. Remove the foil and sprinkle the shredded cheddar cheese on top.
- Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
