2 cups all-purpose flour
1 3/4 cups granulated sugar
3/4 cup unsweetened cocoa powder
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 large eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
1 can cherry pie filling
2 cups heavy cream
1/2 cup powdered sugar
1 teaspoon vanilla extract
Chocolate shavings, for garnish


1.Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
2.In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add the eggs, milk, oil, and vanilla extract. Beat on medium speed for 2 minutes. Stir in the boiling water. The batter will be thin.
3.Pour the batter evenly into the prepared pans. Bake for 30 to 35 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and let the cakes cool in the pans for 10 minutes. Transfer to a wire rack to cool completely.
4.Once the cakes are completely cool, use a serrated knife to level the tops of the cakes if necessary. Place one cake layer on a serving plate. Spread half of the cherry pie filling evenly over the cake layer. Top with whipped cream.
5.Place the second cake layer on top and press down lightly to secure. Spread the remaining cherry pie filling on top. Frost the sides and top of the cake with whipped cream. Sprinkle chocolate shavings over the top for garnish.
6.Refrigerate for at least 1 hour before serving to allow the flavors to meld together. Slice and serve chilled.
